The Cute Cook in the Kitchen
Breakfast/Brunch is perhaps my FAVORITE meal of all. It’s the perfect time to combine the sweet and the savory together.
Being a working mom doesn’t leave a whole lotta time for indulgent brunches during the week. TBH, if I manage to actually cook meals instead of ordering on @seamless then I’ve already won. I can’t help it. When I get home from work all I want to do is snuggle with #BabyLola & hubs or play with @jamesonthewonderpup. But I can’t order out for every meal cause a) I’ll be in the poorhouse b) I’ll be in the poorhouse. So how am I supposed to get my brunch fix in the middle of the week?
Omelettes on the run (OOTR)
I think I got the idea of making OOTR from my mom. She makes eggs in her muffin tins but will sometimes like the pan with pancetta.
I’ve done it that way or mashed ground pork sausage in the muffin pan, cook it on 375, then add fillings and pour the scrambled egg over it.
It’s kinda like a crustless quiche or a scrambled Scotch egg or….
I dunno. All I know is they are mega clutch for weekday mornings. Just grab a couple, warm them a little and go. You can even use them to make your own healthier McMuffin sandwiches. I’ll throw the #recipe on the #facebook page later. #BabyChef was up from 12-3am trying to walk all over her room. (Spoiler alert: she’s only 6 months so it’s more of a cling-to-everything-in-her-path-cruising than a strut.)
Since Daddy has to work today, that means Mommy was up from 12-3am too. You’d think that means she’d sleep in?
Naw fam.
She was up at 7 am singing and saying “Muh Mummmma Mumma muuuuuummmma.” It is the sweetest sound in the world even as dog tired as I am, I am so in love with this dumpling I don’t even care that my eyes are burning from lack of sleep.
She just nodded off while I was posting this. ‘Scuze me while I grab this epic nap.
PS: Don’t judge my beatup baking sheet. It looks like that cause it puts in WORK.

I smoked a WHOLE pork shoulder in the oven and turned it into pulled pork.
I cooked it low and slow for 6 WHOLE HOURS.
It was so tender and juicy I couldn’t believe it.
Toasted up some bodega rolls I copped 3 for $1, did a couple of hassleback baked potatoes w/ olive oil & sea salt, sliced avocado & garlic sautéed green beans and dinner was served. 💥

The combo of bread and melted cheese in all varieties makes me happy food dance happy.
Not just fidget in my seat happy but full on happy food shimmy.
I caramelized the #shallots with rendered #bacon fat then deglazed the pan with @makersmark.
This sammie was so buttery & melty on the inside and perfectly crunchy on the outside.

I’ve literally been laying in bed since Thursday evening, save the 2.5 hrs it took for me to go to the dr and come home yesterday.
While most people spend bedrest time actually resting, binging on junk food television and/ or tabloids me? I spent the time vacillating between NyQuil induced sleep and reading recipes while watching old episodes of Grey’s Anatomy or The Great British Baking Show. Since spring is pretending to make its grand entrance, it seems only right to make a carrot recipe. I decided on carrot cake pancakes w/cream cheese drizzle, Parmesan eggs, and @patlafrieda nitrate free thick cut bacon. (@amazon_fresh sells that bacon $4 for 8oz. You’re welcome.) I used a little cake flour in the pancake batter just to make them super fluffy. You know you s'posed to eat your greens & black eyed peas today, right?
Do you know how much I dreaded this meal when I was little?
I was never a real fan of legumes. Black eyed peas were only spared from being my least favorite because Lima beans exist. Once when I was little, I was forced to sit at the table by my Daddy until I ate all the Lima beans on my plate. I think I was at the dining room table until 930-10pm EASY.
Today I sautéed some onions and mixed those in w/garlic, a splash of bourbon, hickory smoked sea salt & smoked paprika and then added some blah canned black eyed peas. Once everything had assimilated each other’s flavors, I pureed them bad boys together and created a black eyed peas smear which you see plated with my Mexican Cola French Onion greens, bacon wrapped BBQ shrimp, and grilled pecorino Romano polenta cakes.
We fittin'a have ALL the prosperity this year. 💸🤑💰💵💥
